Ok, so I know you get two Focus Item slots with Evocation and Thaumaturgy, but do you get any default enchanted item slots or do you have to convert them for a focus?

You have to convert a focus slot to get two enchanted item slots.

You get two Focus Item slots for each of Evocation and Thaumaturgy, and have the option of then converting Focus Item slots into 2 Enchanted Item slots per focus item slot given up. There can be some variation, as the rules don't specifically state that a player can 'split' the slots, i.e. the GM could require the player to use up the 2 Focus Item slots gained from Evocation and/or Thaumaturgy in return for 4 Enchanted Item slots, so it is something to check with your GM on how they want to do things. It is also potentially the same situation with Refinements, which might not matter as much initially, but can quickly become a factor later on.

The marginalia states that Refinement can be split between options.
