Long story short, there are average ways to use evocation(Fire throws fire, Spirit makes veils, etc.) which any magical thug like Harry can do with little imagination. But, not everyone goes for the obvious ways to solve problems.
This thread is for the other Evocations. Evocations that use the niche properties of the elements in weird ways. Whether they rely on Subtlety and/or Power isn't the issue. Though the most esoteric and complicated will probably use a combination of both.
Evocations here should be listed by Element(s) used and what they do. Names don't need to be Quasi-Latin as much as what they do.
Air
Convection cyclone - using air to create a convection effect to "Mummify" a person in place.
Creating Tear Gas out of Thin-Air.
Air or Spirit
Oscillating Saw Blade of Force
Drill of Pure Force
Air or Fire
Thermobaric Bomb - Used to bust bunkers in war. It sucks in oxygen and then goes boom.
Earth
Conjured White Phosphorous
Earth-to-Liquid and then back-to-Earth
Magically Grabbing the Calcium in Bones
Air or Earth
Low Voltage, High Amperage Lightning Bolt
Earth or Spirit or Fire
Magical Microwave Beam
Water
Wash Away Life Force (For a Warlock)
Blood Bending ala Avatar: The Last Airbender

Air + Fire + Earth - Glass Tornado, Use Air and Earth to kick of dirt and sand, fire to superheat it into glass, and air to launch it.

Actually the heart rhythm is based off of calcium flow so you could use it to stop a heart. In fact if your spell was tough enough to get the bones their heart would probably stop first anyway.
spirit
you could also make a fishbowl sized non air permeable shield (block) around the head and choke them out due to lack of air.
or you could veil your attacker so they couldn't see themselves. that would totaly screw someone up trying to fight, they'd trip or run into things as well.
Water
manipulate the fluid in someones middle ear to cause severe vertigo and inability to stand, nausea etc.

Fill a persons lungs with water so they drown
Earth
same as above but with earth
Air and Spirit
Surround a person with a whirlwind of force that cuts them to ribbons

Use Magnetism to accelerate small chunks of metal at the speed of bullets.
Increase someone's personal gravity so that objects smash into them.
Spirit or Air, maybe Earth
Create a frictionless surface(or raise someone slightly off the ground) so they have no traction.

Disarm opponent(s): Magnetic effect that disarms people of metallic weapons.

This one wouldnt really be usefull untill your rather powerfull. but hey all the really cool subtle affects are ridiculious complicated right...right?
Fire or earth +Wards
Use your fine control of fire/earth to etch a warding circle into the ground either around yourself[for a protective] or your enemies[for an offensive].
effectPlace the aspect Trapped in a Warding Circle on target. with a warding strength of 6 for 3 exchanges.
You need a base of 3 shifts of power to place an aspect on the scene and then another 2 or so to make it sticky. Then throw in say 6 shifts of power for a warding affect. doable if your a specialist but tricky.

Super-heat the blood in an enemy's veins.
Burn a circle into the ground around an enemy.
Close the Circle.
???
Profit!
Air
Create a vacuum around an enemy's head.
Insert random stabs of electricity into an enemy's nervous system for great amusement! (Could also be worked via earth magic)
Spirit

Psychomancy
Veils

Hexing
Emotional Manipulation
Illusions (Phantasms)
Glamours
Chronomancy (not recommended, even discounting the Lawbreaking)
Necromancy (also not recommended as an evocation)
And likely many more.
A particularly fun one I thought up was increasing/removing the momentum of one of a charging enemy's legs so that they end up falling over themselves.
Two words: Invisible Wedgie.
Water
Create a shroud of moving water that encompasses the enemy, cutting off any magical connections emanating from that person. (Not really a good one for standard spellcasters but brilliant for necromancers and the likes)
Create a fog that can help you hide/run away/etc.
Increase the water levels in an enemy's cells until they burst.
Increase the water pressure in an enemy's eyes until they burst/go blind/start screaming.
Summon the fluid in the skull to the back so that the frontal lobe dries up.
Earth
Take a cue from Magneto and summon the iron out of an enemy's body.
Bunch up a load of metals/minerals in an enemy's heart until it's too big to fit into a vein/artery then release.
