There were a ton of times I had to stop reading because I was laughing at humor or gleefully chortling at the action...but I think this series of lines sticks out as my favorite.

It's the lead-in to this quote that makes this line memorable.

I found this to be a favorite (don't know if it really counts as a quote, per se):

“Maintain discipline, Mister Journeyman,” Creedy said severely.
“Maintenance is what I do, idiot,” snapped the engineer. “Don’t tell me my business, you jumped-up wollypog.”

Just about anything that Master Ferus and Folly say, but one that made me chuckle,

I've been trying to remember what the AP stood for in a department at work for three days so obviously my favorite quote so far in the book is

"Accounts payable"
Quote
Bob started tittering. "Look out! Look out for that vicious mega-squirrel, boss!" He said, hardly able to speak clearly. "My gosh! that ficus is about to molest you!"

I might be getting this down a bit wrong, as I listened to it on audiobook rather than read it but...

"Where are my dumplings?"
