Emissary of Nature, a Druid Character Concept

I'm new to Fate and DFRPG, and it's been a while since I read the books, so I could use some help on a hopefully interesting character concept.

My original concept was a Were-Owl Photographer. I like the connection between a bird of prey and the practice of photography. But I found that there wasn't really anywhere to go with the character. I took the Were-form Template and spent 3 refresh to be able to change into an Owl... and then I was done. It could be a fun character to play in a low-powered game, but the game my DM wants to run is going to be Chest Deep, so I feel like I need something a little more tied in to the supernatural. But if I did end up playing this character, what would be the source of his Were-Form ability? In the books the Alphas learned a spell from Tera, so I would consider them Minor Talents. But then why do we need a separate template for Were-forms?

In any case, my next character idea was to build an Emissary of Nature, someone who could take the druidic role of protecting the wild from the encroachment of industry, as well as protecting the mortal plane from the intrusion of demons and otherworldly creatures.

The problem with this idea is that I'm not clear on the exact role of the Fae in the Dresden Files universe as relates to nature. I know that they are nature-themed, and they have the "wildness" of nature, but do they actually care about nature? Are they even considered to "belong" on the mortal plane? If I was a druid that defended "the earth", would I be at odds with the Fae or a servant of the Fae?

My vague memories of the Fae from the books is that they're more concerned with fighting eachother and taking advantage of humans, not with protecting the earth.

So how can I make a character that wants to fight the unnatural creatures of the world, and help humankind to live in harmony with nature, and has been given powers to help him accomplish these things. (In other words, what entity would be the source of his power?)

Is there any place for such a character in the Dresden Files universe without GM-handwaving?

Are the greek gods part of the Dresden universe? When you say he hasn't been featured "yet" it makes it sound like he's at least been mentioned, so he's confirmed to exist?

The Greek Gods are there. They haven't appeared, though. Apparently, next book features Hades (the god). So you can go completely to town.

So I guess the other main question was "do Faeries count as prey" to someone defending nature and the mortal plane?

Is there anything you can point me to, in terms of information on the role of the greek gods in the Dresdenverse?
